Why haven't DVDs been overthrown for clunky old 640x480 VHS tapes by the modern analog hipsters?

Because nobody could pretend that VHS provided a high-quality picture.

It's no different than the sound quality of an LP.

I think it is. There are a lot of people who listen to crappy-quality music all day long, and if you played them something from an LP and something from a DVD through their usual equipment, they wouldn't be able to tell which was which. Play them a movie clip from VHS and the same clip from a DVD, and I think most of them would easily tell the difference.

The sound quality of a VHS tape and an S-VHS tape are very different. The S-VHS is much better.

The VHS decks had 250 lines of horizontal resolution. S-VHS and LaserDisc had 400 lines, and DVD had 500 lines. VHS audio had a frequency range of 70-10,000 Hz, while the S-VHS was 20-20,000 Hz. The LaserDisc digital audio had a range of 4Hz to 20,000 Hz with a dynamic range of 99 dB. Not too shabby.
